This recipe is a great alternative to store bought chicken nuggets. They’re made with simple, minimal ingredients and are sure to please even the pickiest of eaters!

Here’s all you need:
- 4 chicken breasts
- 2 eggs
- 1 cup almond flour
- 1 tsp Italian seasoning
- 1 tsp paprika
- ½ tsp chili powder
- salt and pepper (to taste)
Here’s how we make it:
- Preheat oven to 400 degrees and line a cookie sheet with parchment paper
- Cut the chicken into small pieces (nugget sized) and set aside
- Crack the eggs into a small bowl and whisk
- In a separate larger bowl, mix together the almond flour and seasonings
- Dip each piece of chicken into the egg mixture, then transfer it to the bowl with the almond flour and seasonings
- Roll the chicken until it’s completely covered in the “breading”
- Place the nugget on your prepared pan and repeat until all of the chicken is breaded
- Place in the oven and bake for 10 minutes
- Flip each chicken nugget over and bake for another 8-10 minutes or until the internal temperature reaches 165 degrees
