Banana Pancake Bake

We’ve been making banana waffles and pancakes for years, but after our waffle maker broke, I needed a fast way to make their favorite waffles in the morning that didn’t result in me flipping pancakes over and over. I resorted to scrambled pancakes for a while… but it just wasn’t the same.

I knew there had to be a way to turn this favorite, animal based, breakfast into a one pan bake!

This Banana Pancake Bake is made with only 6 simple ingredients and is sure to become a family favorite in your home, as it has ours!

What you’ll need to make this banana pancake bake:

  • 4 Bananas
  • 8 Eggs
  • 4 tbsp Milk
  • 1 tsp Vanilla
  • 1/2 tsp Cinnamon (we love Burlap & Barrel!)
  • 1/2 tsp Baking Powder

How to make it:

  1. Preheat your oven to 425 degrees
  2. Add all ingredients to your mixer (or bowl) and mix until combined well
  3. Line your baking dish in parchment paper and pour the mixture in
  4. Bake for 35 minutes or until a toothpick comes out clean
  5. Cut and serve with maple syrup

Our boys request this recipe almost every morning! It’s a great way to make a hot breakfast without all the fuss of pancakes!

Note

I highly recommend using parchment paper - I tested this recipe without and simply buttered the pan... the pancake bake stuck very badly.
